Any kitchen work demands muscles you never even knew existed.

Your legs will hate you, but get some good, proper shoes with insoles.

Your back will hate you, try and find a place that has kitchen mats, instead of bare floor.

Your arms will hate you, and they will just have to get used to it…

The thing is, you’ll work steadily and THEN ALL OF A SUDDEN EVERYONE HAS AN ORDER NOOOOOOWWWWW and you run yer nuts off, and finish & go home, genrally buzzing from the adrenaline, which is why so many cooks, chefs and staff drink excessively…to shut down the noise…so be wary of that

The mat (along with) good shoes and insoles cushion impact on your legs/back. It also creates a non slip area that is important if you’re working with oil (hot or cold).

If you have several mats running along a line it’s customary to take plastic wrap and tie the ends so they all are one piece and don’t scootch away from each other during the shift.

Start with renting & work to get your captains license.

Growing up on a very large lake I have plenty of horror stories about people who don’t take boat safety seriously, drunk driving etc. It is easy to pick up but the possibility of you fucking up your life (and others) increases.

For cheap and easy sailing, try Hobie Cats, small catamarans that are a blast to sail, very easy to learn and navigate with.

Way back as a line cook I was on saute and it was the season for soft shell crab. I had a full rail of tickets, and 2-14in. saute pans with oil heating up on full blast while I knelt down to grab the crabs from my prep cooler across from the range.

The 'roided up chef stepped over me to get to middle to expedite the rush, and grabbed one of the pans with now very hot oil in them…realizing that they had oil he stopped his motion but Newtons law kept the oil flowing, down onto my bare forearm, hand and how I was positioned my ankle.

The grill guy immediately took a pan of water and splashed my arm with it, rolled down my sleeve and soaked it…and as a bonus being a dumbass I finished the shift before driving myself to the ER. Some good blisters but fortunately no scarring, very little pain because it was kept covered.

Bonus bits: The hotel/golf resort just implemented a drug policy, and if you were injured or did 200 USD of damage you needed to take a drug test, which I did. Policy also stated that you wait 3 days not working for the results. This was the start of a very busy weekend with a car show on the golf course, etc, and every warm body was needed, I went in to work the next day and if they wanted to send someone else for a drug test because they caused the accident, I suggested the ill tempered redheaded café chef…my results were discarded later.

Bonus bonus, right after the policy was put in place, a manager dropped a chandelier & walked away from his job after 5 years working there instead of taking the drug test.

I totally get you, I’m the same with auto mechanics, I tried but no joy. But I do know a thing or two about cooking.

There are some things you can do to help yourself, get a list together of meats that are better with lengthy time cooking methods- for instance pork shoulder or sirloin.

Get a crock pot, slow cooker, or smoker.

Basically, you can get recipes for these which are literally the same: Season meat, add potatoes, carrots or other hearty vegetables. Set to cook and walk away- it cooks itself.

Cooking at home doesn’t always mean cooking from scratch, you can absolutely grab a can of soup (cream of mushroom) and add it to boiled pasta with some canned tuna, then bake it with a little cheese over the top.

Focus on methods & repetitive dishes, then you can branch out from there.

Meats (braise, slow cooked)

Sides (potatoes, root veg, onions)

Seasonings (seasoning blends, packets, etc)

Sauces (bbq, salad dressings, soups, etc)

Don’t be too hard on yourself, I am in the kitchen everyday and there is nothing better than a good sandwich for me at home. Simple, easy, not complicated flavors and filling. When we get busier the sandwiches get simpler, lol.

What is it about the text messages and emails sent by older people that make me feel like I'm having a stroke?

Maybe they're used to various shortcuts in their writing that they picked up before autocorrect became common, but these habits are too idiosyncratic for autocorrect to handle properly. However, that doesn't explain the emails I've had to decipher that were typed on desktop keyboards. Has anyone else younger than 45 or so felt similarly frustrated with geriatrics' messages?
