Yup, it’s the toppings in the description plus red bell peppers and eggs :) The eggs turned out more over-medium than over-easy, so barely not runny anymore.

Light usage of soy sauce inside. You won’t taste it, but it evenly salts the thing and adds umami flavor that really adds something amazing. Once you do it you’ll wonder why it took you this long

The heat should be no higher than “4”. Put a lid on it to trap heat and melt the cheese before flipping. You won’t need the lid after the flip.

Don’t over stuff them. I know I have a habit of doing that. Yesterday I made some with hash browns diced chicken and cheese. Too big.

I think quesadillas are where corn tortillas really shine. Be sure to soften the tortillas with a little butter in the skillet. I’ve always used jack cheese for these.

Honestly the only thing that I’d improve here is the tomatoes. I prefer them finely diced with a pinch of salt. Add lime juice and fresh cilantro and you’ve got a simple pico de gallo.

Huy Fong has halted production for the summer because the peppers were not ripe enough. Some of the bottles will be more brown because the red/green of the pepper. It's not a bad product, they just had underripe product this season. If you love Sriracha, buy it now because last year (2023) they said they were suspending until the fall and it ended up being 9 months, not 3.

2 whole wheat tortillas 3 eggs, scrambled 2 slices of pork belly 2 slices of cheddar cheese Salt and pepper, if desired Taco sauce, if desired

In a bowl, scramble 3 eggs and set aside.

Assemble two tortillas with cheese on a plate.

In a frying pan under low heat, place in two slices of pork belly and cook for 4 minutes each side.

Once done, place the pork belly in the tortillas and add the scrambled egg into the frying pan and cook until solid, then add to the plate.

Salt, pepper, and add taco sauce if desired.

I had this in Paris a couple years ago thinking “ok it sounds good but strange that it’s so popular”. After the first one it’s all I wanted to eat the rest of the trip haha.
