Denisleary , in Can I Use Corn Flour as an Alternative to Masa Harina for Tortillas?

Masa Harina is corn flour in Spanish.

Willy , in Bought a Pot that's Wider than the Heating Element of my Induction Stove

all the portable induction units in the US will have small coils. It’s a limit of the receptacle power.

it’s not an issue at all. no worries about warping or anything. it’s just gonna be a hot spot.

Adulated_Aspersion , (edited ) in Mistakes Everyone Makes With Mayonnaise - Mashed
  • 2 pieces of bread
  • Put a healthy amount of peanut butter on one.
  • Put them together like a normal sandwich.
  • Put a light layer of mayo on the outside (flats) of bread.
  • Drop in a hot pan to toast the outside.

This will be the most buttery peanut butter sandwich you have ever had.

I highly recommend with jelly/jam or some other sweet element because the buttery-ness and the peanut butter might get a bit overwhelming.

FinalBoy1975 ,

I think this would also be good for a toasted peanut butter and bacon sandwich. I also think it would be good for a toasted peanut butter and tomato sandwich.

That looks deliciously terrible for me.

Efwis OP ,

Ok not extremely healthy, it’s pizza after all. But you can make this gluten free as well as vegetarian if you’re really concerned about that. The worst part is the carbs from the crust if you ask me. But hell YOLO.

schwim ,
@schwim@lemmy.world avatar

I wouldn’t change a thing :)

Efwis OP ,

Neither am I. I like to experiment with my cooking.

My wife tells me I should have been a chef and still recommends me to open a little cafe/restaurant. My problem is I turn 53 on Monday and don’t feel like entering a business venture at this age since I won’t really be able to enjoy the fruits of my labor this close to retirement age.

bakachu , in Tonight dinner made from scratch pizza

This looks amazing. Any leftovers would be an absolute dream of a late night snack.

Efwis OP ,

It is. I hope anyone who want to make their own from scratch pizza tries to do it. Homemade is way better than pizza joint frozen crust. Tastes way better than Pizza Hut, dominoes or papa john’s every time.

viking , in Filter I bought doesn't fit in mason jar. What happens if I have my cold brew exposed to air?
@viking@infosec.pub avatar

Nothing happens. I’m using a regular carafe for brewing, it’s open by design.

Same here. Mine has little air holes on top. My cold brew is still delicious and safe to drink.

AnarchistArtificer , in Garlic: smashed or chopped ?

I love this article from Serious Eats about different ways to chop garlic.

The summary of it is that the more cell walls you rupture, the more strong and acrid the garlic taste is. A microplate is at the far end of that spectrum, but crushing the garlic also releases this extra garlicky power.

Too much of this can be overwhelming in a dish, so there are times when finely sliced or diced but not crushed is preferable. The deciding factor seems to be how you plan to cook it; long cooking rounds out the garlic flavour so by the end, it doesn’t seem as important whether it was diced or crushed. Also, there are some instances where one might want the sharper garlic taste.

FinalBoy1975 , in What are you favorite pasta sauces?

When I’m feeling really lazy, I use a brick of cream of pumpkin soup as a sauce. I melt some butter in a pot, add some chopped garlic and let the garlic get soft, then add some rosemary, thyme and ground white pepper to the pot. If it’s dry herbs, I stir the herbs around for about a minute to wake up their flavors. Then I add the soup and let that get hot. Finally, I melt some grated Parmesan cheese in the sauce then add my cooked spaghetti. You can serve with more cheese if you want (I do, of course). It’s basically a heat up some ingredients in a pot and add cooked pasta. It’s even easier if you have some leftover, plain, cooked spaghetti already on hand in the fridge.

I’ve heard bad things about him. Like how he’ll go to restaurants and order off menu expecting them to make special dishes for him. Also he allegedly said some pretty unsavory things during one of his live talks. But man, I really loved Good Eats.

mvmnts , in Pasta machine recommendation

I was gifted an Atlas 150 for Christmas and as a beginner I really like it. It seems to be well made. It’s a lot of fun to use.

Unaware7013 , in Need a new rice cooker

I lost my rice cooker years ago when it does and switched to the instant pot for versatility. I've come to the point where I do pot-in-pot rice, and it comes out perfectly every time. A couple cups of water and a trivet, then a bowl with the 1:1 water:rice plus a tab of butter on the rice setting. Takes a bit but no complaints in my household.

NetHandle ,

I also use an instant pot for cooking rice. It works great, but I have to set the time manually because the pre-set rice setting overcooks my rice.

I use the mini-instant pot, the regular one is just way too big unless you're trying to feed a family of five.

It is nice to reduce the number of kitchen appliances I "need". Instead of a pressure cooker and a rice cooker, I just have a pressure cooker and use it to cook rice.

Edit: I should also add that apparently instant pot went bankrupt, so you might not be able to find one or replacement parts ever again? Maybe?

TheGiantKorean ,
@TheGiantKorean@lemmy.world avatar

We also use the IP for rice. I’m Korean, and my wife is Indian, so we go through a LOT of rice. It works well.
