[Help] How can I self host services (eg, a website, lemmy instance, vpn) on my own hardware while hiding my IP?

I can’t help but feel overwhelmed by the sheer complexity of self-hosting modern web applications (if you look under the surface!)...
In my case, the OG Xbox. The first console I got, so definitely nostalgia tinted feeling. Fable, Dead or Alive and Star Wars Jedi Outcast are probably my most played games on that platform.
I’m in a dilemma, I think ownership of media is important, but the convenience of Spotify and the algorithm of new music that it suggests has helped me find amazing artists that I wouldn’t have heard of otherwise....
TL;DR: old guy wants logs and more security in docker settings. Doesn’t want to deal with the modern world....
I would prefer something based on Debian, like Ubuntu or PopOS, but I’m open for other suggestions as well, as I’m looking for a distro to daily-drive on my new Framework laptop.
I recently spun up my own lemmy instance and was wondering if I had to manually add other lemmy instances to the ‘Allowed Instances’ admin field, or if they are added automatically when someone searches for a lemmy instance?
