Have you considered that maybe they are visible in the UV spectrum? Cats can see different frequencies that humans can’t see. The Wikipedia article does not confirm nor deny this.

Probably will. I don’t think this is a good idea for liability reasons, but people who threaten retail workers are usually cowards. Or crazy, but mostly cowards.

Something more legal would say “this place protected by security and cameras”, with a live video feed on a TV visible to patrons.
