wookiepedia , in It's getting to be soup season. What are your favorite soups?

Homemade Pho is my jam. Trash meat/bone cuts at the grocery store for less than $3/lb or salmon heads.

Just start with oil on saute in the instant pot and bloom out coriander, cinnamon, clove, star anise, and a LOT of black pepper. Toss in chopped onion or shallot, ginger, and lemon grass, add salt. Cook until browned, turn off the heat and toss in smashed garlic cloves, allowing carryover heat to bring out the fragrance. Add about 1/2 cup of water while still hot and use a WOODEN spoon to scrape the frond off the bottom of the cooking vessel. Do not skip this step.

Add your protein (chicken skeletons or smoked turkey wings also work great), then toss in a dash of soy and a few drops of fish sauce. Go easy with the fish sauce as it’s powerful joojoo and easy to overdo. Fill up the vessel to the top fill mark with water and cook on high pressure. In theory, it should require 38 minutes, but I go for an hour and twenty. Strain out the broth and pour over cooked rice noodle and add pho stuff to it.

lietuva , in It's getting to be soup season. What are your favorite soups?

mushroom soup, Adam Ragusea made a video a while, it was amazing! Very hearthy.

I made Georgian Kharcho few times. Its a beef soup with rice and spices.

Theres one that i have an addiction for. Ita a cold beet soup called Šaltibarščiai its basically buttermilk with cucumbers and beets, but its soo refreshing. And it takes no time to prepare. I eat it during the summer

Tomato soup although personally I would love a coddle stew with some tiger bread

It’s sure not traditional French, but I just bought supplies for a few blender soups, lol. Carrot, broccoli, and cauliflower.

howrar , in We're thinking about merging some of the cooking/food communities, want to get your input

Agree with merging. We could use tags in post titles (e.g. [Recipe], [BBQ], [Ask], etc) so we can easily pick out those that interest us, and also allow us to see if a particular subtopic is gaining more popularity.

canthidium ,
@canthidium@lemmy.world avatar

This is something we have been discussing doing and I think it will help greatly with organization. Hopefully Lemmy integrates tagging at some point.

I’m mostly in favor of option one, but I am concerned that it could result in a cesspool filled with memes.

Without a good way to filter out memes, large communities that permit them can easily become unusable.

canthidium ,
@canthidium@lemmy.world avatar

We definitely don’t want the community to be overcome with memes and while we don’t want to disallow memes all together, we actively monitor the communities for proper content. We want these communities to be about actually discussing food/cooking and helping eachother out mostly but having fun and laughing is very much a part of enjoying food, IMO. So memes will be allowed, but if it gets out of hand, we will make sure to let everyone know and discuss where to go from there.

Merge into !food and define thresholds when you will reopen niche communities

NPC OP ,

Defining a clear threshold will be difficult, but we will defnitely keep making sure we keep in touch with the community on this.

XbSuper , in We're thinking about merging some of the cooking/food communities, want to get your input

Absolutely merge. I wish more communities would do this, it would make lemmy so much better.

Cheradenine , in We're thinking about merging some of the cooking/food communities, want to get your input

I have posted here, and the top comments were from people who only commented (and contribute no OC) that it looked bad despite the posts being about technique/ ingredients. If everything needs to be Foodporn I’m out.

NPC OP ,

That won’t be the case. At minimum there would be a !foodporn and a !cooking community.

canthidium OP , in VOTE: Potential "merger" of Lemmy World culinary communities.
@canthidium@lemmy.world avatar

OPTION 3

Leave everything as it is. We will make no changes as far as merging/locking communities. All communities will continue to be managed as they are.

canthidium OP , in VOTE: Potential "merger" of Lemmy World culinary communities.
@canthidium@lemmy.world avatar

OPTION 2

!Cooking will become the new main LW culinary community but we will NOT be locking any of the other communities. We will treat !AskCulinary, !food, and !recipes the same as all the other niche communities in that we would encourage cross-posting to the main !cooking community as well as look into possibly automating this in the future. There will be a pinned post encouraging cross-posting in each community.

canthidium OP , in VOTE: Potential "merger" of Lemmy World culinary communities.

OPTION 1

!Cooking will become the new main LW culinary community. !AskCulinary, !Food, and !Recipes will be locked until such time we have a larger user base that can support those similar communities. We will periodically check in with each community to gauge whether it’s the right time to reopen. There will be a pinned post pointing user to join !cooking in each community.

This is not meant to be a permanent decision and we hope Lemmy grows to be able to support every niche there is.

BudgetBandit , in Do You Need To Wash Rice Before Cooking? Here’s The Science

As a cook with an Asian wife I say: don‘t wash it for Italian risotto and other creamy stuff, but do so for everything else. If it could be dirty rice, rinse it once.

CommunityLinkFixer Bot , in VOTE RESULTS: Please sub to c/Cooking for all general food and cooking discussion going forward. More details inside.

Hi there! Looks like you linked to a Lemmy community using a URL instead of its name, which doesn’t work well for people on different instances. Try fixing it like this: !askculinary, !food, !recipes, !bbq, !foodporn, !sousvide, !koreanfood

Boris_NotTooBadinoff , in [RECIPE] Instant Pot Potato Soup

Perfect timing! The temps are supposed to dip into the 20s this week, this sounds like the perfect companion to the cold weather

canthidium OP ,
@canthidium@lemmy.world avatar

Yep, we just had our first snow storm of the season and that’s why I made it to have while I was locked down lol.

AgnosticMammal ,

Oh yeah definitely. Any aromatic creamy soup with bacon really hits the spot on cold nights.
