To find a good instance, you can just check this site: join-lemmy.org/instances - I’d suggest reading the description of an instance and then browsing the home feed of that instance to see if you like it.
For communities, you can just switch your feed to “all” and browse through posts and see what interests you, then follow that community it was posted in.
