You have a macbook pro 11.1. It can officially run macos 11 and the opencore legacy patcher will definitely work with 12. It may not have the bios (it’s not called the bios but I’m not looking up the right acronym right now) revision required to upgrade directly to either 10.15 catalina or 11 big sur.
First upgrade to 10.13 high sierra to upgrade the bios and make your disk apfs then upgrade to whatever it is you’re looking for.
You may end up having an easy time downloading the dosdude1 high sierra patcher utility onto another computer (it’s not required that it be a mac) and transferring it to the mac in question then running it and using the utilities button in order to download the software for upgrading to high sierra.

Edit: if you end up looking around and trying to learn about it, the “bios” that I admitted to not being the right name earlier is actually the System Management Controller and Boot ROM. Yes it’s actually two different things.
a direct link to the dosdude1 high sierra patch utility - you do not need to use the utility to patch the high sierra installer so it will work on your computer (that’s what the utility does!), you only need to use the Tools -> Download MacOS High Sierra option to download the installer onto your computer so that you can upgrade.
